Spiced Fish Flour



I was getting anxious to go camping once again and hungry for some fish and thought i'd post this recipe, sorry for now no pics, lo and behold, dug through freezer and found pkg. of fish, yahoo!! gotta get out fishing once again. This is one of my kids favorite ways of doing fish.

Your favorite fish (walleye, pike, perch)
butter
Spiced Flour recipe:
2 cups flour
2 tsp. celery salt
4 Tbsp paprika
2 tsp. garlic powder
4 tsp. salt
1 tsp. pepper
2 tsp. dry mustard
1/2 tsp. oregano
1/2 tsp. basil
1 tsp. ginger
1 tsp. thyme

Put all ingredients together in an empty margarine container or zip lock bag, and shake up. this recipe does a lot of fish, but we tend to make a couple batches over the summer while at the lake. Take your piece of fish and dip both sides in, then place in a well buttered fry pan or on a aluminum foil lined BBQ rack, fry fish till golden brown then flip on second side till golden, serve with mashed potatoes & your fav veggie & or cole slaw or when camping we eat our fish with spagehtti in tomato sauce(bought tins, Heinz or whatever your fav brand) enjoy

Cherry Cheese Pie


Jodiene made this dessert for supper tonight absolutely delicious, one could even use blueberry, strawberry or any of your families fav. pie fillings
















3/4 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup butter, softened
1 can (21 ounces) cherry pie filling
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 egg
1 teaspoon vanilla extract

In a small bowl, combine the flour, sugar and salt. Add butter; stir until combined. Press onto the bottom and up the sides of a 9-in. pie plate. Bake at 350° for 10-12 minutes or until lightly browned. Pour pie filling into crust, making sure you dump it in the centre of the pie, spreading a bit to the sides.
In a large bowl, beat the cream cheese, sugar, egg and vanilla until smooth. Carefully spread around outside edges of pie, leaving a 3-in. circle of cherries exposed in the center.
Bake for 30-35 minutes at 350 or until edges begin to brown. Cool on a wire rack. Refrigerate for several hours before serving.

Noodle Soup


10 cups water
2 Tbsp. chicken oxo
1 Tbsp pepper corns
1 tsp. star anise
1 bay leaf
a small piece of ginger
1 Tbsp. parsley
2 onions cut into quarters
salt & pepper to taste if needed
your favorite noodles

Bring water, & spices & onions to a boil and let simmer for half an hr or so. Drain using a seive (or if you like put all spices including onions in spice ball) Cook your fav. noodles add a Tbsp butter and pour your soup mix over.
Today is one of those "soup" days, but hey!! around my house every day is a soup day. Today its this version of Noodle soup & fresh baked buns.

Teriyaki Sirloin Steak


Darren and I had this meal for our 1st anniversary, and we absolutely loved it!

Teriyaki Sirloin Steak

  • 1/2 cup soy sauce
  • 1/4 vegetable oil
  • 1/4 cup packed brown sugar
  • 2 tsp ground mustard
  • 2 tsp ground ginger
  • 1 tsp garlic powder
  • 1 to 1-1/2 pounds boneless beef sirloin steak (3/4 inch thick)

In a large resealable plastic bag, combine the first six ingredients; add the steak. Seal bag and turn to coat; refrigerate for 8 hours or overnight.

Drain and discard marinade. Grill steak, covered, over medium heat for 5-8 minutes on each side or until meat reaches desired doneness.

Yield: 4-6 servings

* I had this steak marinating for 24 hours before we ate it and it was the most tender steak I have ever had. Absolutley delicious!

Roasted Veggies
























carrots peeled & sliced
celery chopped
broccoli
cauliflower
sweet potatoe, red and or white diced
red, green, yellow and or orange pepper sliced
onion sliced
zuchini
tomato
chopped dill
oregano & basil & thyme
salt & pepper


Chop up your veggies whatever kind your family enjoys and place on baking sheet, drizzle on EVOO (extra vergin olive oil) sprinkle with salt, pepper, basil & oregano. Chop dill if you like and sprinkle over. Broil for 10 -15 min. watching so as not to burn, turning every once in a while till slightly browned.
Serve with your fav meat and or spagehti squash & mixed green salad

Zuppa Tuscana Soup


This soup is similar to the Olive Garden Zuppa Tuscana soup
2 onion chopped
2 med. size potatoes cubed, (they leave the peel on) i tend to peel & dice them
6 cups chicken stock ( or 6 cups water & 2 Tbsp. chicken oxo)
1 clove garlic sliced
1/2 lb. spicy sausage ( i use our home made sausage & add 1 tsp. McGormick hot pepper flakes)
1 bunch kale sliced or chopped up
1 cup whipping cream
6 slices bacon fried crisp and chopped
salt & pepper to taste if needed

Saute onion & sausage & garlic until opaque (don't let this brown) add water, chicken oxo and spuds, cook until spuds are done, then add chopped kale & whip cream, let simmer a few min. and top with crisp bacon & serve.

Bean Salad


2 cups yellow and or green beans (cooked)
1 can kidney beans or your fav. mixed beans
1 onion sliced
1 red and or green pepper cubed or sliced
1/3 cup salad oil
2/3 cups vinegar
3/4 cup white sugar
Mix oil, vinegar, and sugar, until sugar is disolved, pour over beans, onion & peppers.
Let stand overnight in fridge.
