Golden Parmesan Potatoes

Golden Parmesan Potatoes
  • 6 large potatoes
  • 1/4 cup flour
  • 1/4 cup grated parmesan cheese
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 1/3 cup melted butter
  • parsley

Preheat oven to 375. Peel potatoes and cut into wedges. Toss mixture of flour, cheese, salt and pepper in a bag. Arrange in melted margarine in 9 x 13 baking dish. Bake for 1 hour, turning once. Sprinke with parsley.

Yield: 6 servings

*I found my potatoes were done after about 45 minutes in the oven. Depends on the size of your wedges I guess. I like them with sour cream and ketchup.

Chinese Spiced Chicken

I decided to try something different for supper and was pleasantly surprised with how tasty and easy this dish is.

Chinese Spiced Chicken
  • 2 to 3 lbs chicken
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1 large green pepper, cut into strips
  • 1/4 to 1/2 tsp ground ginger
  • 1 Tbsp oil

Sauce:

  • 1/2 cup brown sugar
  • 2 tbsp flour
  • 1/2 to 1 tsp ground ginger
  • 1/4 cup soy sauce
  • Juice only from 14 oz can pineapple tidbits

Cut chicken into thin strips. Stir fry chicken and spices in oil for approximately 8 to 10 minutes. Add green pepper and fry 5 to 10 minutes longer. Mix sauce ingredients in order given. Add to meat and stir fry until mixture starts to thicken. Add pineapple tidbits, let simmer 15 minutes. Serve over rice.

* This was delicious as is, but I think next time around I'll add more vegetables to make it more of a stir fry. Yum!

Oh Henry Fudge

My taste buds can testify - this is scrumptious! A recipe created by my Mom-in-law just before Christmas.
Chop four oh henry bars into small pieces.
Put in a microwavable measuring cup/bowl and add:
  • 1 cup chocolate chips
  • 4 cups mini marshsmallows
  • 2 tbsp margarine

Microwave, stirring occasionally, until ingredients are able to be mixed.

Press into greased 9x9 pan.
Voila!



Good Waffles

I grew up eating these waffles. Absolutely delicious! I was thrilled to receive a waffle iron as a gift this Christmas, so I attempted my first ever waffles. Yum...

Good Waffles (Recipe from the Mennonite Treasury)

Sift together:

  • 3 cups flour
  • 1 1/2 tsp salt
  • 4 1/2 tsp baking powder

Beat the yolks of 8 eggs well (saving whites) and add:

  • 1/2 cup milk
  • 1/2 cup heavy cream, sweet or sour may be used (if cream is not heavy use 1 cup)
  • 1 1/2 cups water
  • 1/2 cup melted butter

Add the egg mixture to flour and beat well.

Sauce for Waffles:

  • 1/2 cup waffle batter
  • 1 tbsp flour
  • 1 cup sugar
  • 1/2 cup milk

Beat this well. Bring to a boil, one quart of milk and gradually add the flour mixture. Bring to a boil and set aside. Now add the stiffly beaten eggs whites to the waffle batter and bake in waffle iron.

Yield: 10-12 waffles.

We enjoy waffles with strawberries. Ice cream, bananas, saskatoons or just about anything else also goes well with these.

Easy Bean Bake

I love baked beans! So tasty with chicken or anything from the bbq. And it's a very simple recipe.

Easy Bean Bake
  • 3 14oz cans of pork and beans
  • 1 medium onion, chopped fine and sauteed until tender
  • 1/2 cup brown sugar
  • 1 tsp worchestershire sauce
  • 2 tbsp mustard
  • dash of tabasco sauce
  • 1/2 cup bbq sauce
  • 2 tbsp parsley flakes
  • 2 or 3 strips of bacon, diced and fried*

Mix all ingredients and put into roaster. Bake at 350 for 40 minutes, covered, until it's heated through and the flavors have had a chance to mesh.

This works great in a slow cooker too.

* The bacon is optional, but I would definately put it in next time. The more flavor the better!

Chuckwagon Chili


2 lbs. lean ground beef

1 red pepper chopped fine

1 large carrot chopped fine

2 stix celery chopped fine

1 large onion chopped fine

1 bunch of mushrooms (optional) sliced

1 tin kidney beans (optional)

1 pkg. of your fav wieners cut into bite size pieces

2 tsp. chili powder

1 Tbsp. brown sugar

1 tsp. salt

1 tsp. pepper

2 tins tomato soup


Brown beef, add veggies & rest of ingredients, let simmer. serve with mashed spuds or on a bun. i leave out the beans & mushrooms as most of my crew don't like them.

Creamy Caramel Dessert




2 cups graham crumbs

1/4 cup soft margarine

Mix together and put into bottom of 9 x 13 pan




1 pkg. instant vanilla pudding

Mix as directions on box and pour over crumbs




1 pkg. instand butterscotch pudding

Mix then pour butterscotch pudding on top of vanilla pudding.

Top with cool whip and drizzle butterscotch icecream topping on top. delic.

Cowboy Casserole








1 lb. pkg. lean ground beef


1 small onion (optional)


1 tin cream of cheddar soup


1 tin cream of mushroom soup


1 bag of 5 min. shoestring fries






Brown ground beef and add onion ( most of the time i leave it out) put into bottom of 9 x 13 pan.


Mix cream of cheddar and mushroom soups together and pour over hamburger mix.


Sprinkle contents of fries over soup and Bake for 30 min at 350 or till fries are golden.


Enjoy, this serves family of 5 or 6.
